Salmon Bites (Printable Version)

# What You'll Need:

→ Fish

01 - 1 pound salmon, cut into chunks about 1 inch

→ Sauce Base

02 - 2 teaspoons olive oil
03 - ½ teaspoon black pepper
04 - 1 teaspoon garlic powder
05 - 1 tablespoon soy sauce with low salt

→ Garlic Cream Sauce

06 - 4 garlic cloves, finely chopped
07 - 2 tablespoons butter without salt
08 - 1 tablespoon fresh lemon juice
09 - 2 teaspoons cornstarch, optional for thickening
10 - ½ cup Parmesan cheese, freshly grated
11 - 2 tablespoons chopped fresh parsley
12 - ¼ cup white wine, dry
13 - 1 cup heavy cream

# Steps to Follow:

01 - Dry your salmon cubes well using paper towels. Toss them in a bowl with soy sauce, garlic powder, black pepper, and olive oil so they’re all covered. Spray the air fryer basket lightly with cooking spray.
02 - Put your salmon in the air fryer basket and cook at 390 degrees Fahrenheit. Let it go for 8 minutes, turning or shaking the basket halfway through so it cooks evenly.
03 - While the salmon cooks, melt the butter over medium heat in a small pan. Add the garlic and cook it until it smells great, about 30 seconds. Pour in the white wine and let it bubble away until most of it’s gone, about 1 minute.
04 - Turn the heat down to medium-low and stir in the heavy cream. Let it gently bubble and stir now and then. Add the Parmesan cheese and cook until it melts and the sauce thickens. Mix in the lemon juice and parsley. If you want it thicker, stir the lemon juice with cornstarch before adding. Taste and add salt or pepper if needed.
05 - Put the salmon on plates and spoon the creamy garlic sauce over the top. Serve with steamed veggies or your fave grains for a nice meal.

# Additional Tips:

01 - Swap heavy cream for half-and-half if you want something lighter. Cooking times might change depending on your air fryer and how big your salmon pieces are.
