Cheesy Chicken Fajitas (Printable Version)

# What You'll Need:

→ Main Ingredients

01 - 2 cups shredded cheddar cheese
02 - 4 ounces of cream cheese, let it soften first
03 - 1 cup sour cream
04 - 1 packet of fajita or taco seasoning
05 - 1 small onion, sliced up
06 - 4 colorful bell peppers, sliced the way you like
07 - 6 boneless chicken thighs or breasts (about 4 to 6 oz each), chopped into small pieces
08 - 1 tablespoon of olive oil

→ Optional Garnishes

09 - Salsa
10 - Sour cream
11 - Guacamole
12 - Fresh avocado, sliced

# Steps to Follow:

01 - Take your hot dish out of the oven and let it rest for a few minutes so it isn’t scorching. Scoop onto plates and top with avocado, guac, salsa, or an extra dollop of sour cream if you want.
02 - Move your skillet into the oven. Let everything bake 10 to 15 minutes until the cheese is melted and bubbling on top.
03 - Sprinkle all the cheddar cheese over the mixture, covering it evenly.
04 - Now, toss your chicken back in and add the seasoning, cream cheese, and sour cream. Mix until you don’t see any streaks and everything blends together nicely.
05 - Drop the onions and bell peppers in next, and cook, giving a stir now and then, until they’re as tender as you like.
06 - Heat up your olive oil in a big oven-safe pan on medium. Toss in the chopped chicken and cook till it’s golden and cooked through. Move the chicken out for now.
07 - Kick things off by getting your oven hot—set it to 350°F (about 177°C).

# Additional Tips:

01 - If you’re short on time, grab pre-cooked chicken (5-6 cups diced) instead.
02 - Don’t have a skillet for the oven? Use a greased casserole dish to finish it off.
03 - Pile this on cauliflower rice, regular rice, or stuff it inside a soft flour tortilla.
