Pineapple Coconut Snack (Printable Version)

# What You'll Need:

→ Pantry Items

01 - 1 cup coconut shreds, pick sweetened or unsweetened
02 - 2 tbsp honey or maple syrup (optional, toss in if you want it sweeter)

→ Dairy and Alternatives

03 - 1/4 cup Greek yogurt (totally optional if you're after creamy vibes)

→ Fresh Produce

04 - 1 medium pineapple, peeled and chopped up into bite-size pieces
05 - A few sprigs of mint, just for a fresh pop on top (if you want)

# Steps to Follow:

01 - Pop your coconut-coated pineapple bits onto a nice platter. Let them hang out in the fridge at least half an hour so everything gets cool and firm. Sprinkle some mint leaves on there before serving if you're feeling fancy.
02 - Take a fork or just grab with clean hands, and dunk each pineapple chunk into the creamy coconut mix. If you want to keep it super basic, just press the pineapple cubes right in coconut, no extras needed.
03 - Stir together the coconut, honey or maple (if using), and yogurt in a bowl. Get everything nice and mixed. For a lighter take, ditch the yogurt and sweet stuff and just use coconut.
04 - Grab your peeled pineapple and cut it into little chunks you can eat in one bite. Set them aside for later.

# Additional Tips:

01 - Grab the ripest pineapple you can find so it tastes sweet on its own and you probably won’t need much extra sugar.
