Street Corn Chicken Bowl (Printable Version)

# What You'll Need:

→ Chicken Marinade

01 - 4 boneless skinless thighs of chicken
02 - 2 tablespoons of freshly squeezed lime
03 - 2 tablespoons avocado oil
04 - A teaspoon chili powder
05 - A teaspoon garlic powder
06 - Dash in salt however you like
07 - Black pepper, crack as much as you want

→ Street Corn Topping

08 - 2 cups of grilled (if possible) corn kernels
09 - Thinly sliced red onion, 60 ml
10 - Sour cream, about 60 ml
11 - Mayonnaise, also 60 ml
12 - Crumbled cotija cheese, 60 ml
13 - Chili powder, a teaspoon
14 - Salt, just dust on to your liking
15 - Add a squeeze of lime, 2 tablespoons
16 - Fresh black pepper, it's up to you

→ Rice & Assembly

17 - 4 cups jasmine rice, already cooked
18 - Fresh cilantro, chopped for sprinkling
19 - A handful of lime wedges for the final touch

# Steps to Follow:

01 - Right when you're ready to eat, hit each bowl with a burst of fresh lime juice for some zip.
02 - Start by splitting the warm rice into four. Next, pile up the sliced chicken, spoon on the corn mixture, sprinkle cilantro and extra cotija, then tuck in a lime wedge for that extra zing.
03 - If your rice has cooled, pop some water in and warm it up gently on the stove or zap it in the microwave until steamy.
04 - In a bowl, combine the grilled corn, red onion, cotija cheese, mayo, sour cream, chili powder, salt, black pepper, and lime. Mix until smooth and everything's mixed in nicely.
05 - Heat up a skillet to medium-high. Lay in your chicken and cook until both sides are golden brown and fully cooked, about 8-10 minutes each side. Rest a minute, then slice however you want.
06 - Put together lime juice, avocado oil, chili, garlic, some salt, and black pepper in a bowl. Add in the chicken and toss until coated well. Cover and chill in the fridge about 15 to 30 minutes.

# Additional Tips:

01 - Want it fiery? Add diced jalapeño or a pinch of cayenne right into the corn topping.
02 - Swap jasmine rice for cauliflower rice if you're keeping it lower on carbs.
03 - Stuff like creamy avocado, radish rounds, or quick pico de gallo also make great extras.
