Chilli Beef Sweet (Printable Version)

# What You'll Need:

→ Main

01 - 2 hot bird’s eye chillies, sliced
02 - 2 spring onions, sliced
03 - 0.5 bell pepper, sliced
04 - 0.5 sweet onion, sliced
05 - 120 g corn starch or potato starch
06 - 1 egg
07 - 200 g rump or sirloin steak, thinly sliced

→ Beef Marinade

08 - 0.25 tsp white pepper
09 - 0.5 tsp sugar
10 - 1 tsp sesame oil
11 - 1 tsp ginger garlic paste
12 - 1 tbsp light soy sauce

→ Stir Fry Sauce

13 - 0.5 tsp salt
14 - 1 tbsp sugar
15 - 1 tsp white or rice vinegar
16 - 2 tbsp light soy sauce
17 - 2 tbsp ketchup
18 - 3 tbsp sweet chilli sauce

# Steps to Follow:

01 - Dish it up while it's hot. Eat right away if you can. You could have it with noodles or plain rice if you like.
02 - Throw the crispy beef into your wok with all the veggies. Pour over that sauce you mixed up earlier. Toss everything on high heat for a couple minutes so it's glossy and everything sticks together.
03 - Get your wok hot with a spoon of oil. Toss in onions for just a bit, then add the bell pepper and quickly cook those too.
04 - Warm oil in a deep pan or wok to about 175°C. Drop in the beef pieces in a few rounds; cook until they're crisp and gold-colored. Lift out and let them drain on some kitchen towels or a rack for a moment.
05 - Crack the egg right onto the marinated beef and mix it up. Toss the beef in the starch so it's totally covered. Keep the pieces separated and shake off any extra powder.
06 - In a bowl, mix soy sauce, vinegar, ketchup, salt, sugar, and sweet chilli sauce. Whisk well and put aside for later.
07 - Slice the steak thin. Dump in soy sauce, ginger-garlic paste, sesame oil, sugar and white pepper. Mix it up, cover, and chill out for 15 minutes.

# Additional Tips:

01 - For the crispiest beef, fry a few pieces at a time and eat soon after cooking.
