Bang Bang Skewers (Printable Version)

# What You'll Need:

→ Chicken Skewers

01 - 2 tablespoons hot honey or plain honey, optional
02 - 0.5 teaspoon kosher salt
03 - 0.5 teaspoon cayenne pepper
04 - 1 teaspoon ground black pepper
05 - 1 teaspoon garlic powder
06 - 1 teaspoon paprika
07 - 1 tablespoon extra virgin olive oil
08 - 1.5 to 2 pounds boneless, skinless chicken thighs, cut into 1 inch pieces

→ Bang Bang Sauce

09 - 0.25 cup Sriracha sauce, adjust if you like it more or less spicy
10 - 0.67 cup Thai sweet chili sauce
11 - 2 tablespoons fresh lime juice
12 - 1 cup mayonnaise

# Steps to Follow:

01 - Put the hot cooked skewers on a serving plate. Brush on the rest of the Bang Bang sauce and add more hot honey if you're craving some extra kick. Eat right away while they're still warm.
02 - Set your air fryer to 400°F (204°C) and lay the skewers inside in a single layer. Let them cook for about 10 to 12 minutes. Flip them once about halfway and pull them out when they're golden and their inside hits 165°F (74°C).
03 - Crank your grill to medium-high. Cook the skewers for 15 to 20 minutes, flipping every now and then, till the chicken gets caramelized and hot all the way through (165°F/74°C inside). Keep slathering on more sauce as they cook.
04 - Lay the skewers flat on your baking pan. Slather half of that Bang Bang sauce right over the chicken so every bit gets covered.
05 - Whip together your mayo, lime juice, chili sauce, and Sriracha in a medium bowl until it's all blended and smooth. Scoop half into a bowl for dipping later. The other half is for basting the chicken as it cooks.
06 - Sink your wooden skewers in water for at least 15 minutes so they won't burn. Then thread the marinated chicken pieces on, filling each stick about 2/3 of the way.
07 - Dump the chicken pieces in a big bowl. Pour in the olive oil, paprika, garlic powder, black pepper, cayenne, salt, and honey. Give it all a good toss by hand so every chunk gets a nice coating.

# Additional Tips:

01 - If you're not into thighs, chicken breast will work too.
02 - Dial back on Sriracha, skip the hot honey and cayenne if you want things milder.
03 - When reheating, toss the skewers in your air fryer at 350°F (177°C) for a few minutes till they're just hot.
04 - Store extra skewers in a tightly closed container in your fridge for up to 4 days.
