Florida Cheddar Shrimp (Printable Version)

# What You'll Need:

→ Crust

01 - One 9-inch pie shell, unbaked

→ Seafood

02 - 1 pound of shrimp, peeled and cleaned (fresh if you can get it)

→ Vegetables and Aromatics

03 - 1 tablespoon of butter
04 - 1/4 cup celery, finely chopped
05 - 1/4 cup bell pepper, green, chopped small
06 - 1/4 cup onion, chopped up small
07 - 1 garlic clove, minced

→ Custard Filling

08 - 2 eggs, large
09 - 1/4 teaspoon cayenne
10 - 1 tablespoon lemon juice
11 - 1 teaspoon Worcestershire sauce
12 - 1/2 cup whole milk
13 - 1/2 cup mayo
14 - 1/2 teaspoon salt
15 - 1/4 teaspoon black pepper

→ Topping

16 - 1 cup Cheddar, shredded

# Steps to Follow:

01 - Once it's out of the oven, let it chill on the counter for around 10 minutes. Then you can slice it up and pass it around.
02 - Pop it in the oven and cook for about 30-35 minutes. The top should look golden and the middle will be set.
03 - Put the cooked veggies and shrimp all over the pie shell. Pour that eggy mixture on top of everything, then cover with Cheddar.
04 - Crack eggs in a bowl, add milk and mayo, and whisk till it's smooth. Drop in lemon juice, Worcestershire, salt, both peppers, and mix again.
05 - Heat butter in a big skillet, medium heat is good. Add in garlic, then celery, peppers, and onions. Stir them up till they're soft. Toss in shrimp last, cook till pink, then drain anything extra and take it off the stove.
06 - Get your oven warming up to 425°F (220°C). Put the pie shell on a baking tray.

01 - Make it ahead and just warm it up again when you're hungry.
02 - Try tossing in a little hot sauce for extra zing.
03 - Mix up a few different cheeses if you want, not just Cheddar.
04 - Grab a green salad and pour some chilled white wine to go with it.
