Pour olive oil in your pan and turn the heat to medium. Toss in the diced onion and let it cook around 5 minutes till it's soft and kind of see-through.

Drop ground beef into the same skillet. Crumble as it cooks. When all the pink's gone, throw in oregano, salt, black pepper, and smoked paprika. Mix for another minute so everything gets coated.

Add tomato sauce. Turn the heat down now. Let it bubble gently for 5 minutes so it thickens up a bit and everything mingles.

Lay out your tortillas. Smear spicy mayo in the middle. Next up: pile on the fried rice, pour over some nacho cheese, plop a bit of sour cream, then sprinkle over crushed chips.

Spoon the beef mix on top of that stack. Fold each tortilla side over the filling, and then roll from the bottom so you tuck in all the goodness nice and snug.

Toss a bunch of shredded cheese into a big non-stick skillet set to medium heat. Place your wrapped burritos seam-down right on the cheese. Toast them about 2 minutes per side so the cheese makes a crispy, golden jacket.

Cut burritos in half or leave ’em whole. Extra spicy mayo? Serve it alongside if you’re into that.
