Tex-Mex Grilled Cheese Burrito (Printable Version)

# What You'll Need:

→ Beef Filling

01 - 1/2 cup tomato sauce
02 - 1 teaspoon smoked paprika
03 - 1 tablespoon olive oil
04 - 1 teaspoon salt
05 - 1/2 teaspoon dried oregano
06 - 1 pound ground beef (85% lean)
07 - 1/2 teaspoon black pepper
08 - 1 medium onion, diced

→ Assembly

09 - 1/2 cup shredded Mexican cheese blend
10 - 1/4 cup sour cream
11 - 1/4 cup spicy mayo, more if you want
12 - 4 large flour tortillas
13 - 1 cup nacho cheese sauce
14 - 1 cup fried rice
15 - 1/2 cup tortilla chips, crushed

# Steps to Follow:

01 - Pour olive oil in your pan and turn the heat to medium. Toss in the diced onion and let it cook around 5 minutes till it's soft and kind of see-through.
02 - Drop ground beef into the same skillet. Crumble as it cooks. When all the pink's gone, throw in oregano, salt, black pepper, and smoked paprika. Mix for another minute so everything gets coated.
03 - Add tomato sauce. Turn the heat down now. Let it bubble gently for 5 minutes so it thickens up a bit and everything mingles.
04 - Lay out your tortillas. Smear spicy mayo in the middle. Next up: pile on the fried rice, pour over some nacho cheese, plop a bit of sour cream, then sprinkle over crushed chips.
05 - Spoon the beef mix on top of that stack. Fold each tortilla side over the filling, and then roll from the bottom so you tuck in all the goodness nice and snug.
06 - Toss a bunch of shredded cheese into a big non-stick skillet set to medium heat. Place your wrapped burritos seam-down right on the cheese. Toast them about 2 minutes per side so the cheese makes a crispy, golden jacket.
07 - Cut burritos in half or leave ’em whole. Extra spicy mayo? Serve it alongside if you’re into that.

# Additional Tips:

01 - Microwave or warm the tortillas first so they don’t rip when you roll ’em.
02 - Letting the beef chill out a minute before wrapping helps keep things from getting soggy.
03 - Keep watch on the pan as you grill—cheese can get brown real fast.
04 - Use less spicy mayo if you can’t handle too much heat.
05 - For no meat, go with black beans or some sautéed veggies instead of beef.
