Honey Garlic Meatballs (Printable Version)

# What You'll Need:

→ Mix for Meatballs

01 - 1 lb ground chicken or ground beef
02 - 1 large egg
03 - 2 cloves garlic, minced
04 - 1/4 cup breadcrumbs
05 - 2 tablespoons onion, chopped fine
06 - 1 teaspoon sesame oil (if you want)
07 - 1 tablespoon soy sauce
08 - 1/4 teaspoon salt
09 - 1/2 teaspoon black pepper

→ Garlic Honey Sauce

10 - 3 tablespoons ketchup
11 - 2 cloves garlic, finely minced
12 - 1/4 cup low-sodium soy sauce
13 - 1/3 cup honey
14 - 1 teaspoon cornstarch (if you want it thicker)
15 - 2 tablespoons water

→ Rice Casserole

16 - 1 tablespoon butter or olive oil
17 - 1/2 cup frozen peas (no need to thaw)
18 - 1 cup uncooked jasmine or long grain white rice
19 - 2 cups chicken or vegetable broth
20 - 1/2 cup diced bell peppers any color
21 - 1/4 cup chopped green onions (optional for garnish)

# Steps to Follow:

01 - Set oven to 375°F (190°C). Grease a 9x13 inch dish lightly with spray or oil.
02 - Put ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil, pepper, and salt in a big bowl. Mix just enough so it stays tender.
03 - Roll the mix into about 20-24 balls around 1 to 1.5 inches wide. Heat a bit of oil in a pan over medium. Brown meatballs for 2-3 minutes on each side but don’t cook all the way through.
04 - Combine honey, soy sauce, ketchup, water, and minced garlic in a small pot. Warm on medium till it bubbles gently. If you want thicker sauce, add cornstarch mixed with water and cook one more minute. Take off heat.
05 - Spread raw rice in the greased pan. Add bell peppers and frozen peas on top. Drizzle with olive oil or melted butter. Pour broth evenly and stir just a bit. Nestle browned meatballs into the rice so they sink a little. Pour the honey garlic sauce over it all.
06 - Cover the dish tightly with foil and bake for 40 minutes. Take the foil off and bake 10-15 more minutes until the rice is done and the top has a light golden color.
07 - Let it sit for 5-10 minutes before serving. Sprinkle with chopped green onions if you like.
