Voodoo Cheese Fries (Printable Version)

# What You'll Need:

→ For the Fries

01 - 4 tablespoons ranch dressing, plus extra for dipping
02 - 1/4 teaspoon black pepper
03 - 1/4 teaspoon salt
04 - 1/4 teaspoon paprika
05 - 1/4 teaspoon chili powder
06 - 1/4 teaspoon onion powder
07 - 1/4 teaspoon garlic powder
08 - 1 1/2 teaspoons brown sugar
09 - 28 to 32 ounces frozen French fries

→ For the Cheese Sauce

10 - 2 cups medium cheddar cheese, freshly shredded
11 - 2/3 cup whole milk
12 - 2 tablespoons all-purpose flour
13 - 2 tablespoons unsalted butter

# Steps to Follow:

01 - Pile fries onto four plates, using one quarter for each. Pour around 1/4 cup of cheese sauce on the top of each pile.
02 - Splash 1 tablespoon of ranch across the fries and sprinkle a bit of the leftover spice mix over them.
03 - Do the same with the rest of the fries, sauce, and ranch, so you finish up with three more plates.
04 - Let the cheese sauce hang out over a low flame. If it looks too thick, just pour in a little more milk and stir it in.
05 - In a tiny bowl, toss together black pepper, brown sugar, paprika, salt, onion powder, chili powder, and garlic powder.
06 - Get those baking sheets lined with foil and sprayed up, then heat the oven to what the fry bag says.
07 - Lay out the frozen fries in single layers on the trays. Hit them with most of the seasoning, but save about half a teaspoon for later.
08 - Melt your butter in a medium skillet on low. Stir in the flour and keep moving it around for a minute or two till it's blond.
09 - Keep whisking while you slowly pour in the milk. Stir until you've got a smooth mix.
10 - Toss in the shredded cheddar in a few rounds, stirring each time until perfectly smooth and melted.
11 - Give the fries a good toss to coat them, then add to the oven. Halfway through the bake, switch the trays around. Bake till crispy and golden, just as the fry pack says.
12 - Dig in right away with more ranch, cheese sauce, or some ketchup for dipping on the side.

# Additional Tips:

01 - Go for block cheese and shred it fresh—store-bought shreds just won't melt as nicely.
02 - Don't drown each portion in cheese sauce or you'll lose out on that awesome potato crispiness.
03 - These fries are meant to be eaten fresh and hot. Freezing won't work out well.
