Zucchini Air Fryer Fries (Printable Version)

# What You'll Need:

→ Seasonings

01 - 1 tablespoon Italian seasoning blend
02 - 1 teaspoon black pepper, or to taste
03 - 1 teaspoon salt, or to taste

→ Produce

04 - 3 medium zucchini

→ Oil

05 - 2 tablespoons cooking oil spray

→ Coating

06 - 1/3 cup grated Parmesan cheese
07 - 1 cup panko or Italian-style breadcrumbs
08 - 2 large eggs
09 - 1/2 cup all-purpose flour

# Steps to Follow:

01 - Move those hot zucchini sticks to a plate and dig in right away. Best served as a tasty snack or a cheesy, herby side bite.
02 - Spritz your air fryer basket with a little oil. Lay your zucchini fries so they don’t touch. Give them another quick spray over the top for extra crunch. Pop them in at 400°F (204°C) for about 9 minutes. You’ll know they’re ready when they’ve got a golden crust.
03 - Cut the zucchini into fry-shaped pieces, about three inches each. Roll each stick in your flour/seasoning mix, dunk them in egg, and then coat them with the cheesy breadcrumb combo. Gently press so the crumb sticks. Do this for all your pieces.
04 - Grab a big plate and mix up your flour, salt, pepper, and Italian spices. In a second bowl, beat your eggs until smooth. In a third bowl, just stir together your breadcrumbs and Parmesan.

# Additional Tips:

01 - Want gluten-free and fewer carbs? Just go with almond flour for the base and swap regular crumbs with crushed pork rinds. Taste first—some pork rinds come salty already!
02 - You can shake things up with slices of eggplant or green beans. Cut them about the same size as the zucchini and tweak air fryer time if you need.
