Peach Raspberry Delight (Printable Version)

# What You'll Need:

→ Peach Filling

01 - 5 juicy peaches, sliced up
02 - 125 g juicy raspberries
03 - 75 g fine sugar

→ Cobbler Topping

04 - 2 tablespoons flaked almonds
05 - 2 teaspoons milk (add more if your dough's too stiff)
06 - Zest of one lemon
07 - 1 teaspoon baking powder
08 - 140 g plain flour
09 - 90 g sugar (caster works great)
10 - 90 g cold butter, pick whichever kind you have

11 - Sprinkle some Demerara sugar on top if you like

# Steps to Follow:

01 - Switch your oven to 160°C for fans, or aim for 170°C if you're using standard heat.
02 - Mix peach slices with raspberries and sugar in a bowl, then dump everything into an ovenproof dish and leave it be for now.
03 - In a big bowl, toss in flour, baking powder, and sugar. Drop in the butter, then rub it all together till it turns chunky with some buttery bits left. Add zest and stir. Pour in the milk and stir just until it's soft, adding a splash more if it's not coming together.
04 - Spoon the dough all over your fruit, then throw almonds on top. For a sweet crunch, shake on some Demerara sugar if you want.
05 - Slide the dish in your oven. Let it bake around 25 to 30 minutes, so the topping browns and fruit juices bubble up the sides.

# Additional Tips:

01 - Peeling the peaches is up to you. The skins make the whole thing chunkier, which can be nice.
02 - Want your dough softer? Add a splash more milk till it feels kind of sticky.
