Pizza Soup Sausage Pepperoni (Printable Version)

# What You'll Need:

→ Base

01 - 1 pound Italian sausage (take off the casings)
02 - 1 tablespoon olive oil

→ Vegetables

03 - 2 garlic cloves, minced up
04 - 1 medium green bell pepper, chopped small
05 - 1 medium onion, chopped small

→ Herbs and Seasoning

06 - Salt and black pepper, toss in what you like
07 - 1/2 teaspoon dried marjoram
08 - 1/2 teaspoon dried basil
09 - 1 teaspoon dried oregano

→ Tomato and Broth

10 - 4 cups chicken stock
11 - 1 teaspoon sugar
12 - 1 cup tomato sauce
13 - 1 can (14 oz) crushed tomatoes

→ Meat and Finishing Touches

14 - 4 ounces mozzarella cheese, grated up
15 - 6 to 8 basil leaves, torn up
16 - 4 ounces pepperoni, cut into quarters

# Steps to Follow:

01 - Scoop hot soup into bowls, then sprinkle each bowl with grated mozzarella. Let it hang out for a few minutes to get all melty.
02 - Now toss in those basil leaves and adjust the salt and pepper until it tastes just how you want.
03 - Pour in crushed tomatoes, tomato sauce, a little sugar, pepperoni, and your chicken broth. Stir it all, crank up the heat till it boils, then turn it down and let it bubble gently for 10 minutes.
04 - Toss in your garlic, oregano, basil, and marjoram. Give it a stir and let it cook just till it smells awesome — about a minute.
05 - Throw in the diced onion and bell pepper. Let them cook, stirring now and then till they're soft. Should only take a few minutes.
06 - Get your olive oil hot in a big pot. Drop in the sausage, break it up with your spoon, and cook until it loses all the pink color.

# Additional Tips:

01 - Try both spicy and regular sausage to keep things interesting.
02 - Mushrooms or your favorite veggies can totally go in too.
