Kick the oven up to 400°F (200°C) so it gets nice and hot for roasting.

Toss the sliced sausage, onion, green beans, and potatoes into your big mixing bowl together.

Pour the oil over your pile, then shake on some garlic powder, Italian herbs, black pepper, and salt.

Mix everything so it’s well covered in the oil and spices. Don’t miss the bottoms!

Lay it all out flat across a parchment-lined rimmed sheet pan so it roasts up right.

Throw the pan in the hot oven for 30 to 40 minutes. Flip everything over halfway so it all gets brown and cooked, and the potatoes are soft.
