Shrimp Tacos Avocado Sauce (Printable Version)

# What You'll Need:

→ Shrimp Marinade

01 - 3 tablespoons avocado oil
02 - Juice of 1 lime (about 2 teaspoons)
03 - 1/2 teaspoon kosher salt
04 - 1/2 teaspoon red pepper flakes
05 - 1 teaspoon garlic, minced
06 - 1/2 teaspoon dried oregano
07 - 1/2 teaspoon ground cumin
08 - 1 teaspoon smoked paprika
09 - 1 teaspoon dark chili powder
10 - 1 pound raw shrimp, peeled, deveined, tails off

→ Avocado Crema

11 - 1/2 teaspoon kosher salt
12 - 3 tablespoons water
13 - 3 tablespoons avocado oil
14 - 1/2 cup plain Greek yogurt
15 - Juice of 2 limes (about 3 tablespoons)
16 - 3 cloves garlic, peeled
17 - 1 jalapeño, seeds out
18 - 1/2 cup fresh cilantro leaves
19 - 1 medium avocado, pit out and scooped

→ Taco Assembly and Garnishes

20 - Lime wedges for serving
21 - Fresh cilantro for garnish
22 - 8-10 small flour or corn tortillas, toasted a bit
23 - 1 cup shredded purple cabbage
24 - 1 cup shredded green cabbage

# Steps to Follow:

01 - Toast your tortillas, then pile on some of the cabbage slaw and shrimp. Spoon over plenty of avocado crema, sprinkle on cilantro, and squeeze over some lime. Time to eat!
02 - Crank up the heat on your grill or skillet. Put the marinated shrimp in so they’re spread out. Cook for 2-3 minutes a side until they’re opaque and picking up a nice char.
03 - Chop up both kinds of cabbage. Toss with a few big dollops of avocado crema until it’s all coated. Save what’s left of the crema for topping later.
04 - Toss avocado, cilantro, jalapeño, garlic, lime juice, Greek yogurt, avocado oil, water, and salt into your food processor. Blend until you’ve got a super smooth, creamy dip. If it’s too thick, just add more water. Set aside for now.
05 - Mix avocado oil, lime juice, chili powder, smoked paprika, cumin, oregano, minced garlic, red pepper flakes, and salt in a bowl. Add the shrimp, toss well, and let it chill in the fridge for up to 30 minutes.

01 - Keep shrimp marinade time under 30 minutes, or the citrus will make them mushy.
02 - Shrimp are done cooking when they’re firm and shaped like the letter C.
03 - Want to drizzle the crema easily? Pop it into a zip bag, snip off a corner, and squeeze.
