Cheesy Bacon Melt (Printable Version)

# What You'll Need:

01 - 8 strips crispy bacon
02 - 4 tablespoons room-temp butter
03 - 60 ml ranch dressing, homemade or store-bought

→ Cheese & Bread

04 - 8 thick pieces of brioche or Texas toast
05 - 113 g sliced Monterey Jack cheese
06 - 170 g sharp cheddar cheese slices
07 - 113 g sliced Provolone or Velveeta

→ Extras

08 - Jalapeño slices for some kick
09 - Caramelized onions for a sweet touch

# Steps to Follow:

01 - Set oven to 200°C (400°F). Lay bacon out on a baking pan and bake for 15-20 minutes until crispy. Put aside.
02 - Let all your cheeses sit out about 15 minutes so they melt nicely later.
03 - Get a big skillet or griddle going on medium-low heat to start making your sandwiches.
04 - Spread softened butter thickly over one side of each slice.
05 - Place bread slices butter-side down on the pan. On half, layer cheddar, Monterey Jack, and Provolone cheese. Top with 2 bacon strips and drizzle ranch on top. Finish with the other bread slices, buttered side up.
06 - Cook on first side for 3-4 minutes until golden and crispy. Flip carefully and cook another 3-4 minutes until cheese melts and the other side looks golden.
07 - Take sandwiches off heat and let them sit a minute. Cut on the diagonal and serve right away while the cheese stays gooey.
