Zucchini Parmesan Pie (Printable Version)

# What You'll Need:

01 - 1 small onion, diced up fine
02 - 3 cups zucchini, thin sliced
03 - 1 garlic clove, chopped up
04 - 1/2 cup canola oil
05 - 1 cup grated Parmesan cheese
06 - 1 tablespoon chopped fresh parsley
07 - 1 cup biscuit or baking mix
08 - 3 large eggs
09 - 1/8 teaspoon black pepper
10 - 1/4 teaspoon salt

# Steps to Follow:

01 - Leave it on the counter for a bit so it's not super hot. Cut it up and enjoy it while it's still nice and warm.
02 - Slide the plate into your hot oven at 175°C (that’s 350°F). Let it cook till it's golden on top and you poke the middle with a knife and it comes out clean, around 25 to 35 minutes.
03 - Dump all the zucchini mix into your greased pie plate. Spread it around so it's even everywhere.
04 - Spritz or brush the 23-centimetre deep pie plate with a little canola oil or a spritz of no-stick spray.
05 - Dump in the onion, baking mix, and sliced zucchini. Give it all a good stir so everything gets mixed in just right.
06 - Crack the eggs in a big bowl and throw in the cheese, oil, parsley, garlic, salt, and pepper. Use a whisk to get it all nice and smooth.

# Additional Tips:

01 - Try swapping in Gruyère for some of the Parmesan, or add different fresh herbs if you want more kick.
