Turn your oven to 375°F (190°C). Grab a big baking sheet and grease it lightly then put it aside.

Dump potato wedges in a big bowl. Pour olive oil over them and mix until they're all coated.

Grab a small bowl and mix the salt, garlic powder and Italian herbs together. Toss potatoes with Parmesan cheese until covered. Then sprinkle your spice mix all over them.

Lay out your seasoned wedges on your greased baking sheet. Make sure they're in one layer with the skin facing down.

Stick the potatoes in your hot oven for about 25-35 minutes. They're done when you can easily poke them with a fork and they look golden.

Scatter fresh parsley on top and serve with whatever dipping sauce you like.
