Chicken Cornbread BBQ Meal (Printable Version)

# What You'll Need:

01 - 1 pound ground chicken
02 - 1/2 yellow onion, diced
03 - 1 green bell pepper, diced
04 - 1 cup BBQ sauce
05 - 15 ounces tomato sauce

→ Cornbread Topping

06 - 2 cups shredded cheddar cheese
07 - 1/2 cup yellow cornmeal
08 - 1/2 cup whole milk
09 - 1/2 cup flour
10 - 1/3 cup sugar
11 - 1/4 teaspoon salt
12 - 1 teaspoon baking powder
13 - 1 large egg
14 - 1/4 cup melted unsalted butter

# Steps to Follow:

01 - Get your oven hot at 400°F (200°C).
02 - Coat a 9x9 baking dish with cooking spray.
03 - Brown the ground chicken with diced onion and bell pepper in a big skillet over medium heat for about 5-6 minutes until the meat isn't pink anymore.
04 - Stir in BBQ sauce and tomato sauce. Let it bubble up, then turn down the heat and simmer for 5 minutes.
05 - Mix cornmeal, milk, flour, sugar, salt, baking powder, egg, and melted butter in a big bowl until the batter looks smooth.
06 - Put the chicken mix in your baking dish first, sprinkle cheese all over it, then pour the cornbread batter on top.
07 - Stick it in the hot oven for 30-35 minutes until you see the cornbread top turn a nice golden color.
08 - Let it cool down for 5 minutes before you dish it up.
