01 - 1 big chicken breast without skin or bones (about 1 pound)
02 - ½ cup blue cheese sauce (ranch works too)
03 - 2 tbsp butter, split
04 - ½ cup chopped yellow onion
05 - 1 celery stalk, chopped small
06 - 3 garlic cloves, finely chopped
07 - 1 can (14.5 oz) chopped tomatoes with juice
08 - 4 cups chicken stock
09 - 1 pound penne noodles
10 - ½ cup hot buffalo sauce
11 - 8 oz. cream cheese, soft and cut in chunks
12 - 1.5 cups cheddar cheese, grated
13 - 1 cup mozzarella cheese, grated
14 - 1 tiny bit red pepper flakes (if you want)
15 - 2 tbsp cold butter (if you want)

# Steps to Follow:

01 - Drop chicken into water and let it slowly boil. Cook about 15 minutes until it's done inside. Take it out and pull apart using forks. Mix the pulled chicken with blue cheese sauce and put aside.
02 - Heat up 1 tbsp butter in a deep, wide pan on medium. Throw in chopped onions and celery. Let them cook for 5 minutes till they get soft. Add chopped garlic and cook one more minute.
03 - Pour in the tomatoes with their juice and chicken stock. Let it come to a boil then add your pasta. Make sure all pasta gets covered by the liquid. Put a lid on and let it bubble for 10-13 minutes until pasta feels firm but cooked, stirring now and then so nothing sticks.
04 - Turn heat down low. Add the buffalo sauce, cream cheese chunks, and both grated cheeses. Stir gently until all cheese melts and your sauce starts getting thicker.
05 - Dump in your shredded chicken and red pepper flakes. Mix it all together. If you want, drop in 2 tbsp cold butter and swirl around for a smoother sauce. Serve it hot.

01 - You'll get better sauce if you grate cheese yourself instead of buying the pre-shredded bags.
02 - Use a bit less pasta if you like extra sauce, especially good if you'll have leftovers.
03 - Make sure your cream cheese is really soft so it melts nicely without lumps.
