Chicken Avocado Salsa (Printable Version)

# What You'll Need:

→ Chicken Patties

01 - 1/2 teaspoon ground black pepper
02 - 1/2 teaspoon salt
03 - 1 cup shredded cheese (Provolone, Gouda, or Cheddar)
04 - 2 scallions, chopped up nice and fine
05 - 1 1/2 pounds ground chicken thighs
06 - 1/4 cup mayo

→ Avocado Corn Salsa

07 - 1/2 lime, squeezed for juice
08 - salt and black pepper, as much as you like
09 - 1/2 tablespoon olive oil
10 - 1/8 cup chopped cilantro (fresh works best)
11 - 1 large avocado, cut into slices
12 - 1 ear fresh corn, take the kernels off the cob

# Steps to Follow:

01 - Take those cooked chicken patties, spoon the refreshing avocado corn salsa on top, and dig in while it's still warm.
02 - Grab a sharp knife to shave the kernels off the cob. In a bowl, toss together the corn, avocado, and cilantro. Drizzle with lime juice and olive oil, sprinkle some salt and pepper, then gently stir it all up.
03 - Set your grill or grill pan to medium heat. Cook each patty for around 5 minutes on both sides or until they're cooked all the way through.
04 - Scoop out the chicken mix using a 1/2 cup measure, then shape into nice, round patties that are roughly the same size.
05 - Toss the ground chicken, cheese, mayo, scallions, salt, and pepper into a mixing bowl. Stir it up until the mix looks even all the way through.

01 - If you mix the chicken stuff too much, the patties won't be as juicy, so just give it a gentle stir.
