Take those cooked chicken patties, spoon the refreshing avocado corn salsa on top, and dig in while it's still warm.

Grab a sharp knife to shave the kernels off the cob. In a bowl, toss together the corn, avocado, and cilantro. Drizzle with lime juice and olive oil, sprinkle some salt and pepper, then gently stir it all up.

Set your grill or grill pan to medium heat. Cook each patty for around 5 minutes on both sides or until they're cooked all the way through.

Scoop out the chicken mix using a 1/2 cup measure, then shape into nice, round patties that are roughly the same size.
