Chicken Avocado (Printable Version)

# What You'll Need:

→ Chicken Salad

01 - Chop up all the meat from one rotisserie chicken
02 - 2 tablespoons fresh lime juice
03 - 1/4 cup sour cream
04 - Salt, however much you like
05 - 1/4 cup celery, chopped small
06 - A handful of fresh parsley, finely chopped (about 2 tbsp)
07 - 1/4 cup red onion, chopped
08 - 3/4 cup mayo
09 - Freshly ground black pepper, use as much as needed

→ Stuffed Avocado

10 - 5 soft avocados (can use anywhere from 4 to 6, depends on size and stuffing amount)
11 - Chili powder, a sprinkle for each
12 - Salt, add a pinch or two
13 - Paprika, give it a light dusting
14 - Juice of 1 lime

# Steps to Follow:

01 - Scoop roughly a third of a cup of chicken mix into every avocado half and lay them all out on a platter. Eat right away.
02 - Hit each avocado half with a little lime juice so they don't brown. Sprinkle paprika, chili powder, and just a bit of salt over the top.
03 - Slice a tiny bit off the rounded bottoms of the avocado halves. That way, they'll sit flat and won't roll all over your plate.
04 - Split the avocados carefully and take out the pits. Slide a big spoon around the inside to pop the flesh out in one piece if you can.
05 - Toss chopped parsley, red onion, mayo, the sour cream, celery, lime juice, and a little salt and pepper in with the chicken. Mix it all up until it's totally blended.
06 - Start by pulling all the chicken off the bones and cutting it into small bites. Throw those pieces into your biggest bowl.

# Additional Tips:

01 - Wait until right before you're gonna eat to prep the avocados, so they look fresh and bright.
02 - You can make the chicken mix ahead of time, just keep it chilled and sealed tight.
03 - Any leftover avocado can be mashed up for quick guac.
