Buttery Chicken Garlic Dish (Printable Version)

# What You'll Need:

→ For the Chicken Scampi

01 - 1 ½ pounds chicken breasts without bones or skin, cut into slim strips
02 - 2 tablespoons olive oil
03 - 2 tablespoons butter
04 - 4 cloves garlic, finely chopped
05 - 1 small red bell pepper, cut into thin slices
06 - 1 small yellow bell pepper, cut into thin slices
07 - 1 teaspoon Italian seasoning
08 - ¼ teaspoon crushed red pepper flakes, if you want some heat
09 - Salt and black pepper as needed
10 - 1 tablespoon fresh squeezed lemon juice
11 - 2 tablespoons fresh parsley, chopped for topping

→ For the Garlic Parmesan Rice

12 - 1 tablespoon butter
13 - 2 cloves garlic, finely chopped
14 - 1 cup long grain white rice
15 - 2 ¼ cups chicken broth, better if low-sodium
16 - ½ cup Parmesan cheese, grated
17 - Salt and pepper as needed
18 - Fresh parsley for topping, if you want

# Steps to Follow:

01 - In a medium saucepan over medium heat, melt 1 tablespoon butter. Throw in garlic and cook for 30 seconds until you can smell it. Add rice and let it cook for 1-2 minutes.
02 - Add chicken broth and wait until it boils. Turn heat down to low, put the lid on, and let it cook for 18-20 minutes until the rice is soft and all liquid is gone.
03 - Take the pan off the heat and mix in Parmesan cheese. Add salt and pepper how you like it. Put the lid back on and set it aside.
04 - Put olive oil and butter in a big skillet over medium-high heat. Add chicken strips and sprinkle with salt, pepper, and Italian seasoning. Let them cook for 4-5 minutes until they're golden and done inside.
05 - Toss in garlic, both red and yellow peppers, and red pepper flakes if you want some kick. Cook for 3-4 minutes until the peppers get soft and you can smell the garlic.
06 - Drizzle with lemon juice and stir everything together. Taste and add more seasoning if needed.
07 - Put some garlic Parmesan rice on each plate and top with the chicken mix. Sprinkle with chopped parsley and more Parmesan if you want. Enjoy while it's hot.
