Chicken Tzatziki Bowl (Printable Version)

# What You'll Need:

→ Chicken Marinade

01 - Salt and cracked black pepper, to your liking
02 - 1 teaspoon dried oregano
03 - 1 teaspoon ground cumin
04 - 2 teaspoons smoked paprika
05 - 3 cloves garlic, chopped up
06 - 3 tablespoons lemon juice
07 - 1/4 cup olive oil
08 - 1 1/2 pounds boneless chicken thighs or breasts

→ Tzatziki Sauce

09 - Salt and cracked pepper, pop in just a pinch
10 - 1 teaspoon dried dill or a big spoonful (1 tbsp) fresh, diced small
11 - 1 tablespoon olive oil
12 - 1 tablespoon lemon juice
13 - 1 clove garlic, chopped fine
14 - 1 cucumber, grated and squeezed to remove the water
15 - 1 cup plain Greek yogurt

→ Bowl Components

16 - 1/4 cup crumbled feta
17 - 1/4 cup Kalamata olives, sliced with no pits
18 - 1/4 cup fresh parsley, chopped
19 - 1/4 cup red onion, finely diced
20 - 1 cucumber, diced
21 - 1 cup cherry tomatoes, cut in half
22 - 2 cups hot cooked basmati rice

# Steps to Follow:

01 - Spoon a heap of basmati rice into each dish. Add the chicken on top, then drop on tomatoes, cucumber pieces, onion, parsley, olives, and a handful of feta. Spoon the cool tzatziki over everything and if you like, put on extra parsley or dill.
02 - Stir together Greek yogurt, grated and squeezed cucumber, garlic, a hit of olive oil, a squeeze of lemon, dill, salt, and pepper. Give it a chill in the fridge till you’re ready for it.
03 - Fire up your grill or set a grill pan or skillet on medium-high. Take the chicken out of the marinade. Cook about 5-7 minutes each side, until the inside hits 165°F. Give the chicken a minute to chill out before you slice it up.
04 - Plop the chicken into the marinade and roll it around to coat every spot. Put some plastic over the bowl and stash it in the fridge for at least half an hour (overnight makes it taste even better).
05 - Whisk together olive oil, lemon juice, garlic, smoked paprika, cumin, oregano, salt, and pepper in a big bowl until it all comes together.

# Additional Tips:

01 - Let your chicken soak in the marinade overnight if you want it extra juicy. Slice only after it’s rested so it stays moist inside.
02 - Want it with fewer carbs? Swap out the rice for riced cauliflower or even a big bed of greens.
