Buffalo Chicken Cauliflower (Printable Version)

# What You'll Need:

→ Main Ingredients

01 - Chopped fresh parsley or chives, for topping (optional)
02 - Ground black pepper, as much as you like
03 - Pinch of salt, to taste
04 - 3 green onions, sliced
05 - 100 grams mozzarella, grated
06 - 100 grams cheddar, grated
07 - 120 millilitres ranch or blue cheese dressing
08 - 240 millilitres buffalo wing sauce
09 - 480 grams shredded cooked chicken breast
10 - 1 big cauliflower, broken into pieces

# Steps to Follow:

01 - Sprinkle green onions and fresh herbs over the casserole right after taking it out of the oven. Eat it warm for the best taste.
02 - Set your dish in the oven and bake for 20–25 minutes till it's bubbly and cheesy on top and everything's hot inside.
03 - Pour everything into your greased baking dish. Cover with all the cheddar and mozzarella cheese.
04 - Mix chicken, buffalo sauce, ranch or blue cheese, and the cauliflower in a big bowl. Toss so everything's coated evenly. Add salt and pepper any way you like.
05 - Steam or lightly boil the cauliflower bits for around 5 to 7 minutes, just till they're soft but not mushy. Drain and pat them dry so they aren't wet.
06 - Heat the oven to 200°C. Lightly oil a baking dish, about 33x23 centimetres.

# Additional Tips:

01 - Want more kick? Stir in some red pepper flakes or splash in extra hot sauce.
02 - Like it crunchier? Add some pork rinds or crispy onions on top before it goes in the oven.
03 - Pop leftovers in a sealed container. They'll keep in the fridge for three days.
