01 -
Get your oven hot at 425°F (220°C). Stick a baking sheet in there while it warms up so it'll be sizzling when you need it.
02 -
Slice sweet potatoes into 1/4 inch fries. Don't worry about peeling unless you want to. Try keeping them all about the same size so they cook evenly.
03 -
Drop your cut fries in cold water for half an hour. This gets rid of extra starch and helps them turn out crunchier.
04 -
Empty the water and dry the fries really well with paper towels. Grab a big bowl and mix them with olive oil, garlic powder, paprika, salt, and pepper. If you're using cornstarch for extra crunch, toss it in now and coat everything well.
05 -
Pull out that hot baking sheet carefully. Spread your fries out so they aren't touching each other. Cook them for 25-30 minutes, and flip them halfway. They should turn golden brown and crunchy.
06 -
Take them out when they look nice and crispy. Give them a few minutes to cool down before you start munching.
