Zucchini Fritters (Printable Version)

01 - 4 cups grated zucchini
02 - 2/3 cup plain flour
03 - 2 large eggs, slightly beaten
04 - 1/3 cup chopped scallions (green and white bits)
05 - 2 tablespoons olive oil

# Steps to Follow:

01 - Throw the grated zucchini in a colander over a bowl and sprinkle some salt on it. Let it sit for 10 minutes. Squeeze out all the water you can with your hands, then dump it in a big bowl.
02 - Throw in the flour, eggs, chopped scallions, 1/4 teaspoon salt, and 1/8 teaspoon pepper with the zucchini. Mix it all up good. Grab a plate and cover it with paper towels.
03 - Warm up the olive oil in a big pan on medium heat. When it's hot, drop 3-tablespoon chunks of the zucchini mix into the pan, flatten them gently into circles about 2 inches apart. Cook them for about 2 to 3 minutes, flip them over, and cook another 2 minutes till they're golden. Move them to your paper towel plate and add a bit of salt.
04 - Keep scooping and cooking until all the zucchini mix is gone. Eat them while they're hot, topped with sour cream and extra scallions if you want.

# Additional Tips:

01 - Make sure you measure your zucchini before squeezing the water out.
02 - These taste best right away, but you can keep leftovers in the fridge for 2 days or freeze them for up to 3 months.
03 - To make them crispy again, warm them up in an oven, air fryer, or hot pan.
