Crispy Zucchini Air Fryer (Printable Version)

# What You'll Need:

→ Zucchini Fries

01 - 2 medium zucchinis
02 - 45 grams plain flour
03 - 1 tablespoon dried Italian herbs
04 - 1 teaspoon kosher salt, taste and adjust
05 - 0.5 teaspoon ground black pepper, as much as you like
06 - 2 large eggs
07 - 60 grams regular breadcrumbs
08 - 60 grams panko crumbs
09 - 30 grams Parmesan, finely grated
10 - Spray cooking oil, for coating

→ Garlic Aioli

11 - 4 cloves garlic, minced
12 - 1.5 tablespoons fresh lemon or lime juice
13 - 0.5 teaspoon Dijon mustard
14 - 160 grams mayo
15 - Kosher salt, add as needed
16 - Black pepper, add as needed

# Steps to Follow:

01 - Cut zucchinis into long sticks about 8 cm by 1.25 cm. Put them aside for now.
02 - Start by whisking your flour, Italian seasoning, salt, and pepper in a shallow bowl. Get a second bowl and beat the eggs in it. In your last bowl, mix both kinds of crumbs with that grated Parmesan.
03 - Coat each zucchini stick in the flour mix. Knock off extra. Dunk them into the eggs, let extra liquid drip away, then toss them in the Parmesan-breadcrumbs until they're well covered. Place them on a plate after.
04 - Give the air fryer basket a good spray of oil and set it to heat up at 200°C.
05 - Line up breaded zucchinis in the basket but leave some space. Spray the tops with oil. Fry them in the air fryer for about 8 to 10 minutes. Flip once, wait for a golden color and crispy touch. If you like, sprinkle on extra salt when hot.
06 - While your fries are cooking, mix together the minced garlic, citrus juice, and Dijon in a small bowl. Let it hang out for 10 to 15 minutes. Whisk in the mayo so it's creamy, then add salt and pepper to taste.
07 - Put your crispy fries on a plate and set out the garlic aioli as a dip.

# Additional Tips:

01 - For the best crunch, really pat your zucchini dry with paper towels before you dredge them.
02 - Fry them in one even layer. Work in a few rounds so each fry gets evenly browned.
03 - Got leftovers? Pop them in a sealed container in the fridge for 3 days tops. When you're ready to eat, air fry them again at 175°C for a few minutes to make them crispy again.
04 - Freezing? Let the fries chill on a tray in one layer until solid, then toss them all in a freezer bag. They'll keep fine for up to 2 months.
