Chia Pudding with Strawberry (Printable Version)

# What You'll Need:

→ Strawberry Chia Pudding

01 - 140 grams thawed frozen strawberries
02 - 1/2 cup sugar-free plant yogurt
03 - 1 cup plain soy milk
04 - 2 tbsp dried strawberry pieces
05 - 2 tbsp pure maple syrup
06 - 1 tsp vanilla flavoring
07 - 1/3 cup whole chia seeds

→ Almond Date Crumble

08 - 1/4 cup peeled almonds
09 - 2 sticky medjool dates
10 - 2 tbsp regular oats
11 - 1 tbsp shredded coconut
12 - Small amount of kosher salt

# Steps to Follow:

01 - Throw strawberries, milk, yogurt, maple syrup, dried strawberry bits, coconut, vanilla, and a tiny bit of salt into your blender. Whizz everything till it's totally smooth. You might need to stop and scrape the sides down once or twice.
02 - Pour chia seeds into a big container, then add your blended strawberry liquid. Stir it all up really well, put the lid on and wait about 5 minutes. Give it another good stir to break up any lumps, then cover and stick it in the fridge for at least an hour before you dig in.
03 - Dump almonds, oats, coconut, dates, and a tiny bit of salt into a small food processor. Give it short pulses until you get a nice crumbly mix.
04 - Drop a spoonful of crumble into the bottom of a small cup, then add your chia pudding on top. Finish with another spoonful of crumble and some fresh strawberry slices if you want.

# Additional Tips:

01 - Make it as sweet as you like by adding more or less maple syrup.
02 - Stir several times during setting to stop any clumping.
03 - If you want stronger strawberry flavor, try mixing in some strawberry jam.
04 - Need a runnier pudding? Just splash in extra milk before eating.
