Stir paprika, chili powder, salt, onion powder, garlic powder, and a dash of cayenne (if using) together in a small dish until everything looks mixed up.

Fill a deep pan with oil deep enough that fries can swim—aim for about 7.5 cm. Fire up the stove and let the oil get good and hot to 180°C.

Drop frozen fries into that bubbling oil. Let them cook 6 to 8 minutes till they're crisp and golden. Scoop them up with a slotted spoon and let them hang out on a paper towel-covered plate.

Tear up all the cheese slices. Toss cheese, milk, and briny jalapeño juice into a microwave-safe bowl. Pop it in the microwave uncovered. Heat in 30-second bits, stirring in between, till it’s smooth and melty.

Toss the freshly fried fries in a large bowl with your homemade seasoning. Try to coat them all over.

Pile fries onto a big plate and scoop the warm cheese sauce into a bowl for dipping. Dig in while they’re hot.
