Nacho Fries (Printable Version)

# What You'll Need:

→ Fries

01 - Vegetable oil for frying
02 - 450 g frozen crispy-style French fries

→ Seasoning Mixture

03 - 2 tablespoons paprika
04 - 2 teaspoons chili powder
05 - 2 teaspoons fine salt
06 - 1 teaspoon onion powder
07 - 0.25 teaspoon cayenne pepper, you can skip this if you want less heat
08 - 1 teaspoon garlic powder

→ Cheese Sauce

09 - 60 ml whole milk
10 - 1 tablespoon juice from pickled jalapeños
11 - 16 slices of American processed cheese

# Steps to Follow:

01 - Stir paprika, chili powder, salt, onion powder, garlic powder, and a dash of cayenne (if using) together in a small dish until everything looks mixed up.
02 - Fill a deep pan with oil deep enough that fries can swim—aim for about 7.5 cm. Fire up the stove and let the oil get good and hot to 180°C.
03 - Drop frozen fries into that bubbling oil. Let them cook 6 to 8 minutes till they're crisp and golden. Scoop them up with a slotted spoon and let them hang out on a paper towel-covered plate.
04 - Tear up all the cheese slices. Toss cheese, milk, and briny jalapeño juice into a microwave-safe bowl. Pop it in the microwave uncovered. Heat in 30-second bits, stirring in between, till it’s smooth and melty.
05 - Toss the freshly fried fries in a large bowl with your homemade seasoning. Try to coat them all over.
06 - Pile fries onto a big plate and scoop the warm cheese sauce into a bowl for dipping. Dig in while they’re hot.
