Fruity Cheese Pastry Bites (Printable Version)

01 - 6 ounces softened cream cheese
02 - 2 tablespoons granulated sugar
03 - 2 teaspoons fresh lemon juice
04 - 1 teaspoon grated lemon peel
05 - 1 teaspoon pure vanilla
06 - 1 (17.3-ounce) box thawed frozen puff pastry sheets (2 sheets)
07 - 1 1/2 cups seasonal fresh fruit
08 - 1 large beaten egg
09 - Coarse sugar for topping (if you want)

# Steps to Follow:

01 - Turn your oven to 400°F and put parchment paper or Silpats on two baking sheets.
02 - Beat together cream cheese, sugar, lemon juice, lemon peel, and vanilla in your stand mixer until smooth and fluffy.
03 - Lay puff pastry on a floured surface. Smooth out the creases with a rolling pin. Use a 4-inch round cutter or drinking glass to make four circles from each pastry sheet.
04 - Place four dough circles on each baking sheet about 2 inches apart. Score a ring 1/4-inch from the edge, then poke the middle with a fork. Spread cream cheese mix inside the scored border and top with your chosen fruit.
05 - Mix the egg with a tablespoon of water in a small bowl. Brush the pastry edges with this egg wash and sprinkle with coarse sugar if you'd like.
06 - Pop them in the oven for about 15 to 18 minutes until they're puffy and golden brown.
07 - Take pastries out and let them sit on the baking sheets for 5 minutes, then move them to a cooling rack until completely cool.
