Spicy Garlic Noodles (Printable Version)

# What You'll Need:

01 - 4 oz dry wheat noodles (try Taiwanese cut noodles, frozen udon, or plain ramen)
02 - 3 garlic cloves, chopped fine
03 - ½ tbsp chili flakes (Sichuan style or Korean Gochugaru work great)
04 - 1 chopped scallion, cut into tiny bits
05 - ½ tsp Chinese dark vinegar (swap with rice or apple vinegar if needed)
06 - 1 tsp dark soy
07 - ½ tsp light soy
08 - ½ tsp chicken stock powder
09 - ¼ tsp white sugar
10 - 1 tsp toasted seeds from sesame
11 - 3 tbsp cooking oil with neutral flavor

# Steps to Follow:

01 - Fill a pot halfway with water and let it bubble up over medium-high heat. Toss in noodles and cook until they're just firm, around 2-3 minutes or follow the pack timing. Drain and dump them into a big bowl made of ceramic, glass or metal.
02 - Drop the light soy, dark soy, Chinese vinegar, chopped garlic, chicken stock powder, white sugar, chopped scallions, chili flakes, and sesame seeds right on top of your noodle pile.
03 - Pour your cooking oil into a small pot and warm it up on medium-high until you see smoke coming off. Pull it from the heat right away and pour this super hot oil over your scallions, garlic bits, and chili flakes to wake up their flavors.
04 - Mix everything together with chopsticks or those kitchen grabbers until all the good stuff is spread out evenly. Eat it right away and throw some extra scallions and sesame seeds on top if you want.

01 - Want more kick? Add a splash of toasted sesame oil just before you dig in.
