Start by heating up your oven to 230°C. Rub a 23x23cm baking pan with some butter or use a baking spray so nothing sticks.

Grab a big bowl and toss in the baking powder, sugar, and flour. Mix them all up until they look even and smooth.

Add your buttermilk and gently stir everything together with a spoon or spatula until you get a nice thick, sticky dough. If it seems kinda dry, just drizzle in another splash of buttermilk (about 15–30ml).

Drop in the shredded cheddar and your ham cubes. Fold them in until they look mixed through, but don’t overwork it.

Pour your buttery goodness into the baking dish. Give the pan a little swirl so every corner gets slicked.

Scoop all the dough into your pan. Smooth it out with your fingers (greased up works best) or a spatula so it’s even.

Take a sharp knife and mark the dough into 9 squares. Slide it into the hot oven for 25 to 30 minutes. Spin the dish halfway so it bakes up nice and even. If the top browns too quick, just set some foil on top.

You’ll know they’re ready when the top goes golden brown and a toothpick poked in the middle comes out clean. Edges should be crisp and a bit caramelized. Hang tight for five minutes, then slice along your marks.

Best enjoyed hot out of the oven. Add a dab of butter or a little honey if you’re feeling fancy.
