Line a 13x18 inch baking pan with foil and set your oven to 425° F so it starts heating up.

Cut sweet potatoes up after peeling them, pop into a big bowl, and shake on some salt.

In a little pan on medium, melt your butter with the olive oil. Pour in the honey, lemon juice, and zest, then keep it on low for about 1 minute.

Drizzle the warm honey-lemon mix over your sweet potatoes and toss everything around so they're all coated.

Spread your sweet potatoes out in one layer on the prepped pan. Bake around 25 minutes, peeking at them for the color you like, and let them go another few minutes if you want them darker.
