Keto Ham Cheese (Printable Version)

# What You'll Need:

01 - 1 3/4 cups ham, chopped up
02 - 1 cup cheddar cheese, shredded
03 - 2 cups almond flour
04 - 3 oz cream cheese, brought to room temp
05 - 2 large eggs
06 - 1 tbsp unsalted butter, melted
07 - 1/4 cup heavy cream
08 - 1 tsp baking powder
09 - 1/4 tsp salt

→ For topping

10 - 1 tbsp unsalted butter, melted

# Steps to Follow:

01 - Set your oven to 350°F (177°C) and grab a baking sheet. Either grease it or toss some parchment paper on top.
02 - In a big bowl, mix together cream cheese, eggs, and shredded cheddar. Keep going until you don’t see any big lumps left.
03 - Toss in the almond flour, heavy cream, baking powder, butter, and salt. Stir until you get a dough that sticks together.
04 - Carefully fold the chopped ham into your dough. Don’t mix it too long. Stick the dough in the fridge for about 10–15 minutes so it sets up a bit.
05 - Using an ice cream or cookie scoop, scoop dough out and place on your sheet. Gently press each one down a bit—don’t flatten completely.
06 - Let the biscuits bake for 13–15 minutes until you see a nice golden color.
07 - Once they’re out and still warm, brush melted butter on top and dig in right away.

# Additional Tips:

01 - If you want to cut down on fat, swap heavy cream for plain almond milk. Just know they won't be as rich.
02 - You want the dough to be thick but don't mix it to death or they'll get kind of tough.
03 - If you go with a little cookie scoop, you'll get around 22 biscuits at about 1.9 net carbs each. Scoops that are bigger give about 12, so bake those for 16–18 minutes instead.
