# Steps to Follow:

01 - Turn your oven on to 400°F (200°C).
02 - Grab a big pan and melt your butter on medium. Toss in onion, carrots, and celery. Cook until tender, roughly 5-7 minutes.
03 - Sprinkle flour into the pan and stir for a minute more. Slowly pour in cream while mixing until everything thickens up nicely.
04 - Gently stir in your lobster bits, peas, herbs, citrus juice, and seasonings. Take off the heat and cool it down a bit.
05 - Dust your counter with flour and roll your pastry until it fits your dish. Press it down gently.
