# What You'll Need:

01 - 1 pound cooked lobster chunks, cut into bite-sized pieces
02 - 1 cup whipping cream
03 - 2 tablespoons plain butter
04 - 1 onion, diced
05 - 2 carrots, chopped
06 - 2 celery ribs, chopped
07 - 1 cup frozen sweet peas
08 - 1 teaspoon fresh chopped thyme leaves
09 - 1 teaspoon minced fresh parsley
10 - 1 tablespoon regular flour
11 - 1 teaspoon fresh lemon squeeze
12 - Salt and pepper as needed
13 - 1 sheet puff pastry or regular pie crust
14 - 1 egg for brushing

# Steps to Follow:

01 - Set your oven to 400°F (200°C) and let it warm up.
02 - Drop butter into a big pan over medium heat. Toss in onion, carrots, and celery, cooking until they're soft, about 5-7 minutes.
03 - Sprinkle flour over veggies and stir for a minute. Slowly pour in cream while stirring until everything's smooth and thick.
04 - Gently stir in your lobster chunks, peas, thyme, parsley, lemon juice, salt, and pepper. Take off heat and cool it down a bit.
05 - Dust some flour on your counter and roll the pastry until it fits your dish. Push it down gently.
06 - Dump the lobster mix into your dish and spread it around evenly.
07 - Lay the dough on top of your filling and pinch the edges closed. Cut some small holes to let steam out and brush with beaten egg for shine.
08 - Stick it in your hot oven for 25-30 minutes until the top turns a nice golden color.
09 - Pull it out and wait about 10 minutes before you dive in.
10 - Cut your warm Lobster Pot Pie into portions and enjoy.
