Seafood Dream Lobster Buns (Printable Version)

# What You'll Need:

01 - 1 ½ pounds cooked lobster chunks, diced into small pieces
02 - 4 tablespoons plain butter
03 - ½ cup mayo
04 - 1 tablespoon squeezed lemon juice
05 - 1 teaspoon mild Dijon mustard
06 - Salt and pepper as needed
07 - 4 split-top rolls or hot dog buns
08 - Snipped fresh chives for topping (if you want)
09 - Optional lettuce for base layer

# Steps to Follow:

01 - When working with live lobster, get a big pot of salty water boiling. Drop in the lobster and let it cook for 8-12 minutes until you see a bright red shell and white meat.
02 - Take your lobster out and run it under cold water. After it's cool enough to touch, break open the shell and pull out all the meat. Cut everything into smaller, bite-friendly chunks.
03 - Grab a bowl and mix your mayo, juice from the lemon, some mustard, plus a bit of salt and pepper. Give it a taste and tweak it how you like.
04 - Carefully stir your lobster pieces into your sauce. Make sure everything gets coated but don't stir too hard or you'll break up those nice lobster bits.
05 - Put a skillet on medium heat. Melt about a tablespoon of butter in it. Place your buns in and toast them until they turn a nice golden color on both sides.
06 - If you're using lettuce, put some in each bun first. Then scoop plenty of your lobster mix on top.
07 - Throw some chopped chives on top if you want. Eat them right away while they're still warm.
