Street Corn Salsa Mix (Printable Version)

# What You'll Need:

01 - 1 ½ cups corn kernels
02 - 1 jalapeno, chopped tiny (take out middle and seeds if you want it milder)
03 - ½ teaspoon chili powder
04 - ½ teaspoon salt
05 - Juice from half a lime
06 - 2 tablespoons chopped fresh cilantro (skip if you want)
07 - 2 ounces crumbled cotija cheese (about 1/4 cup)

# Steps to Follow:

01 - Chop the jalapeno into tiny bits. Get rid of the insides and seeds for less heat or keep them if you like it spicy.
02 - Dump all your stuff in a small bowl and stir it up good. Give it a taste and add more of anything if needed.
03 - Stick it in the fridge for about 30 minutes until it's cold. Try to eat it the same day you make it. If it looks dry later, splash in some more lime juice or a bit of water.
