Peach Watermelon Mint (Printable Version)

# What You'll Need:

→ Salad Components

01 - 1/2 cup chopped fresh mint leaves
02 - 1 English cucumber, sliced thin
03 - 3 peaches, cut into wedges or thin slices
04 - 3 cups seedless watermelon, diced in half-inch cubes

→ Dressing

05 - Small pinch of sea salt
06 - 1 tablespoon honey (you can skip this part)
07 - 2 tablespoons freshly squeezed lime juice

→ Finishing Touch (optional)

08 - Feta cheese crumbles for topping

# Steps to Follow:

01 - Pile the salad into a serving dish and dust the top with some feta if you’re feeling it. Enjoy it cold, or leave it at room temp—it’s all good.
02 - Pour your dressing everywhere over the salad, and toss everything together. Go gentle so the fruit stays nice and chunky.
03 - Mix together the lime juice, honey (if you want), and a bit of salt in a little bowl. Whisk until the honey melts in.
04 - Now drop in your cucumber slices and then scatter the chopped mint on top.
05 - Cut watermelon into cubes you can eat in a bite and slice up the peaches into thin wedges. These go together first in a big bowl.

# Additional Tips:

01 - Want it to stay crisp? Keep the dressing on the side until right before you eat.
