Pepperoni Cheese Quesadillas (Printable Version)

# What You'll Need:

→ For the Vegetable Filling

01 - Salt and pepper to taste
02 - 1/2 teaspoon dried basil
03 - 1/2 teaspoon Italian seasoning
04 - 1/4-1/2 cup diced bell peppers
05 - 1/4 cup diced onions
06 - 1 teaspoon olive oil or butter

→ For the Quesadillas

07 - 4-6 oz pepperoni slices
08 - 1 cup grated mozzarella cheese
09 - 1/2-1 cup marinara or pizza sauce
10 - 8 (8-inch) flour tortillas

# Steps to Follow:

01 - Let those quesadillas chill for a minute, then slice 'em up. Enjoy while they're still nice and warm, and if you feel like it, dunk them in a little marinara sauce.
02 - Grab your skillet and put the quesadillas in over medium heat. Let each side go for 2-3 minutes till the outside is toasty and the cheese is gooey. If you want, give 'em a gentle press with your spatula.
03 - On one side of each tortilla, slather marinara sauce. Pile on cheese, pepperoni, and the veggie mix across half the tortillas. Put the other tortillas on top to make your quesadillas.
04 - Toss your oil or butter into a hot skillet. Drop in onions and peppers, sprinkle on the basil, Italian seasoning, salt, and pepper. Let them sizzle for a few minutes till they go soft, then get them out of the pan.

# Additional Tips:

01 - Skip the oil for a crisper bite—just stick to a dry pan when you cook the quesadillas.
02 - Letting them hang out for a minute after cooking helps keep the filling from making a mess.
