When you pull it out, give it about 5 minutes to cool. Spoon on sour cream or diced green onions if you like.

Spread the rest of your grated Colby Jack on top of the pork layer. Stick it back in the oven and bake for 20 more minutes.

Once that first bake is done, take out the dish. Layer the pork in barbecue sauce all over your crispy hash brown base.

While the veggies bake, get your cooked pulled pork and slather it with the barbecue sauce so everything is coated.

Dump the whole veggie and cheese mix right into your baking dish. Smooth it out so it’s even, then get it in the oven for 20 minutes.

Toss the hash browns, corn, goodies like onion, bell pepper, jalapeños, plus melted butter, salt, pepper, and half the Colby Jack in a big bowl. Mix it good.

Heat your oven up to 200°C. Spray a 23x33 cm pan with nonstick spray so nothing sticks, then set it aside.
