Grab your short-grain or Arborio rice and wash it in a strainer under cold water until you see clear water flowing through.

Dump the washed rice into a big pot with milk, sugar, and salt. Give it all a good stir.

Put your pot on medium heat and let everything warm up to a gentle bubble, stirring now and then so nothing sticks to the bottom.

Turn the heat down low once it's bubbling. Toss in your vanilla, cinnamon, and nutmeg while stirring.

Keep cooking for about 30-35 minutes, making sure to stir often. You'll know it's done when the rice feels soft and everything looks thick and creamy.

If you want, throw in some raisins or other dried fruits during the final 10 minutes. Just fold them in gently.

For a bit of tang, grate some lemon skin into your mixture right before you take it off the stove.

When you're happy with how it looks, take the pot off the heat. Serve it hot in bowls right away, or let it cool down before putting it in the fridge for 10-15 minutes if you like it cold.
