Combine the saved pineapple liquid, tamari sauce, dark sugar, smashed garlic, grated ginger, pinch of salt, and ground pepper in a container.

Drop the pork pieces into your crockpot.

Dump the pineapple liquid mix on top of the meat.

Put the lid on and cook for 6-8 hours on low setting or 3-4 hours on high until meat falls apart.

Throw in the pineapple pieces during the final hour of cooking time.

Stir together the starch powder and water in a tiny bowl to create a smooth mix.

Take out the meat and fruit from the crockpot and set them aside. Transfer the leftover juice to a pot. Stir in the starch mix and heat until bubbling, keep stirring until it gets thick.

Put the meat and fruit back in the crockpot and drizzle the thick gravy over everything. Sprinkle with sliced scallions before you dish it up.
