Pineapple Pork Crockpot (Printable Version)

01 - 2 pounds diced pork butt or shoulder in chunks
02 - 1 can (20 ounces) drained pineapple pieces, liquid saved
03 - 1/4 cup tamari sauce
04 - 1/4 cup dark sugar
05 - 3 cloves smashed garlic
06 - 1 teaspoon grated ginger root
07 - 1 tablespoon starch powder
08 - 1 tablespoon fresh water
09 - Pinch of salt and ground pepper
10 - Sliced scallions for topping

# Steps to Follow:

01 - Combine the saved pineapple liquid, tamari sauce, dark sugar, smashed garlic, grated ginger, pinch of salt, and ground pepper in a container.
02 - Drop the pork pieces into your crockpot.
03 - Dump the pineapple liquid mix on top of the meat.
04 - Put the lid on and cook for 6-8 hours on low setting or 3-4 hours on high until meat falls apart.
05 - Throw in the pineapple pieces during the final hour of cooking time.
06 - Stir together the starch powder and water in a tiny bowl to create a smooth mix.
07 - Take out the meat and fruit from the crockpot and set them aside. Transfer the leftover juice to a pot. Stir in the starch mix and heat until bubbling, keep stirring until it gets thick.
08 - Put the meat and fruit back in the crockpot and drizzle the thick gravy over everything. Sprinkle with sliced scallions before you dish it up.
