Spiced Smashed Carrots (Printable Version)

# What You'll Need:

01 - 3/4 cup grated parmesan divided into two portions
02 - 1 pound small baby carrots
03 - 2 tablespoons extra virgin olive oil
04 - 3 cloves finely chopped garlic
05 - 1 teaspoon sea salt
06 - 1 teaspoon freshly ground black pepper
07 - 1/4 teaspoon smoky paprika
08 - Chopped fresh parsley leaves for topping
09 - Dipping options: Tzatziki, Ranch dressing or Sour Cream

# Steps to Follow:

01 - Set your oven to 425°F. Cover a big baking sheet with parchment and scatter half the parmesan across it. Put this aside for now.
02 - Put the baby carrots in a big microwavable bowl with water covering them. Microwave them for 10-12 minutes till they're soft enough for a fork but still firm. Drain them and wipe them dry.
03 - Grab a bowl and toss your carrots with the olive oil, chopped garlic, sea salt, black pepper, and smoky paprika until they're all coated well.
04 - Spread out the flavored carrots on your baking sheet leaving space between them. Use a glass bottom to squash each carrot until it's about 1/4-inch thick. Sprinkle the rest of your parmesan on top.
05 - Stick the baking sheet in the oven and cook for around 20 minutes or until you see the cheese turn brown and crispy.
06 - Scatter fresh parsley on top. Serve them hot with your favorite dip - Tzatziki, Ranch, or Sour Cream all work great.

01 - Don't overcook your carrots before smashing or they'll turn mushy instead of crispy.
