Set your oven to 425°F. Cover a big baking sheet with parchment and scatter half the parmesan across it. Put this aside for now.

Put the baby carrots in a big microwavable bowl with water covering them. Microwave them for 10-12 minutes till they're soft enough for a fork but still firm. Drain them and wipe them dry.

Grab a bowl and toss your carrots with the olive oil, chopped garlic, sea salt, black pepper, and smoky paprika until they're all coated well.

Spread out the flavored carrots on your baking sheet leaving space between them. Use a glass bottom to squash each carrot until it's about 1/4-inch thick. Sprinkle the rest of your parmesan on top.

Stick the baking sheet in the oven and cook for around 20 minutes or until you see the cheese turn brown and crispy.

Scatter fresh parsley on top. Serve them hot with your favorite dip - Tzatziki, Ranch, or Sour Cream all work great.
