Bang Bang Skewers (Printable Version)

# What You'll Need:

→ Chicken Skewers

01 - Half a teaspoon cayenne pepper
02 - A good splash of olive oil, extra virgin if you’ve got it
03 - Two tablespoons of hot honey if you’re feeling spicy
04 - One teaspoon paprika
05 - One teaspoon garlic powder
06 - Half a teaspoon fine sea salt
07 - A teaspoon ground black pepper
08 - About 2 pounds chicken thighs, boneless and cut into pieces

→ Bang Bang Sauce

09 - A squeeze from 2 limes
10 - Roughly a cup of mayo
11 - A quarter cup Thai sweet chili sauce
12 - Quarter cup Sriracha, tweak however hot you want it

# Steps to Follow:

01 - Slide the hot skewers onto a serving plate, pour over any extra Bang Bang sauce, and drizzle with more hot honey if you like. Eat it right away while it's tasty and warm.
02 - Set your air fryer to 200°C. Pop the skewers into the basket, keep them in a single layer. Let them go for 10 to 12 minutes, flip them partway, and check they hit 74°C inside.
03 - With the grill good and hot, toss on the skewers. Cook for about 15 to 20 minutes, turn them every few minutes, and brush with extra sauce. They should get dark and sticky, and be cooked through at 74°C.
04 - Lay the loaded skewers out on a pan, then paint them with half the Bang Bang sauce so they're well covered.
05 - If using wooden skewers, dunk them in water for at least 20 minutes so they won't catch fire. Thread the chicken onto each one so they're about halfway filled or a tad more.
06 - Stir together mayo, chili sauce, Sriracha, and fresh lime juice in a second bowl. Make it smooth, then divide it so you have part for basting and part for dunking after.
07 - Toss chicken in a big bowl with the olive oil, black pepper, salt, garlic powder, paprika, hot honey, and cayenne. Mix until every piece looks evenly coated.

# Additional Tips:

01 - Lower the spiciness by skipping cayenne or hot honey, or cut back the Sriracha for a gentler kick.
02 - Soak your wooden skewers first or they'll burn up on the grill.
03 - If you want you can swap in chicken breasts instead.
04 - Any leftovers keep well for four days sealed up. Warm them back up in the air fryer at 175°C for a few minutes or just microwave them easy.
