Pop the pan on the oven’s top rack and set it to broil for a couple of minutes, just till the top gets crisp. Don’t walk away so it doesn’t burn.

Move your dish to the middle oven rack and bake at 175°C for 35 minutes till the top looks nicely golden.

Scatter whatever oat mixture you have left all over the fruit and syrup.

Take the syrup off heat, mix in vanilla right away, and pour it all over the fruit layer.

Stir brown sugar, cornstarch, a little salt, and water together in a tiny pot on medium-high. Mix the whole time. After about 2 minutes, it’ll get thick.

Layer the sliced strawberries and peaches over the base oats in your pan. Don’t worry about making it perfect.

Spread half your oat crumb onto the bottom of a greased 23x23 cm square baking pan and press it down gently.

Dump oats, flour, brown sugar, cinnamon, and melted butter in a bowl. Mix it with your hands or a fork until it looks crumbly.
