Wash strawberries well and cut into quarters. Put them aside.

Combine water and sugar in a medium pot, heat on medium-high until it just starts bubbling, stir until sugar melts completely. Take off heat and cool down.

Add the cooled syrup, juice, and cut strawberries to a big bowl.

Working with small amounts if your machine is small, puree in a blender or food processor until silky smooth.

Empty the mixture into a container that won't break in the freezer and leave it overnight or at least 6 hours.

Any leftover sorbet will stay good in the freezer for about 2 weeks.
