Tzatziki Chicken Lunch (Printable Version)

# What You'll Need:

→ Tzatziki Mix

01 - 0.25 teaspoon ground black pepper
02 - 0.5 teaspoon salt
03 - 1 clove garlic, minced
04 - 1 tablespoon lemon juice
05 - 2 tablespoons fresh dill, chopped
06 - 180 ml plain Greek yogurt
07 - 1 medium cucumber, finely grated

→ Salad

08 - 0.5 red onion, diced
09 - 1 cooked rotisserie chicken, shredded

# Steps to Follow:

01 - Grab your salad mix and make sure every bit of chicken is covered in the sauce. Chill it for a bit if you want, and scoop onto crackers, greens, or scoop into a pita. Stick the extras in the fridge.
02 - Tear the rotisserie chicken into small chunks. Pop both the chicken and diced onion into your tzatziki bowl.
03 - Dump the cucumber, yogurt, dill, lemon juice, garlic, salt, and pepper into a roomy bowl. Give it a good mix so everything blends smooth.
04 - Pile the grated cucumber in a clean towel and twist to get rid of as much water as you can.

# Additional Tips:

01 - This salad stays tasty in a closed container in your fridge for up to 5 days. Toss it out if it sits out at room temp for over 2 hours.
02 - You can swap the rotisserie chicken for 450 grams of cooked chicken breast (shredded) or canned chicken if you like.
03 - No fresh dill? Go with 0.67 teaspoon dried dill in place of the 2 tablespoons of fresh.
