Take your cold Brie and cut off all the rind with a jagged knife. Let the cheese sit until it's not cold anymore.

Put your soft Brie in your stand mixer bowl with the paddle piece attached. Mix it at medium speed till it gets fluffy and smooth, about 10 minutes. Don't forget to scrape the sides now and then.

Scoop the fluffy Brie onto a plate. Add a drizzle of honey or jam on top and put out some crackers or toasts for everyone to scoop with.
